Bran Muffin Recipe

Beat ½ cup brown sugar or honey with 2 eggs until creamyEasy Bran Muffin Recipe

Add ½ cup oil and beat again

Add the following to a large bowl:

2 cups bran

2.5cups nuttywheat flour

2 cups milk/yoghurt/buttermilk

2t bicarb

½ t salt

125g chopped dried fruit (dates or cranberries are tasty)

Stir in the egg, sugar & oil mixture. Mix well.

Spoon into muffin tray.

Bake on 200 for 10-15 minutes.

You can store the mixture for 2 weeks in the fridge. You can also add a few nuts or seeds etc. If you cannot find nuttywheat flour you can make your own by combining 4-5 cups flour to 1 cup of bran. No need for wasteful muffin liners, just brush your pan with some oil or butter from the wrapper.
