125g butter
5ml vanilla extract (optional)
50g sugar
250g chopped dates
1 egg
200g crushed marie biscuits
dessicated coconut
Place butter, vanilla, sugar & dates in a saucepan and cook over a medium heat. Stir and prod with a wooden spoon until mixed and a bit frothy. Allow to cool just slightly, and then slowly add eggs and biscuits whilst stirring and mixing quickly. You do this part quickly as you don’t want to end up with cooked bits of egg. Mix well. With wet hands shape and roll into little bite sized balls and roll in dessicated coconut. These freeze well.
