Mix 1 egg with 100g flour. Knead to a smooth dough. You can store this in a sealed container, or in wax wrap for a day or so in the fridge. But it is so quick and easy to make it as you need it.
Roll out and slice into desired noodles or shapes. If you do not have a pasta machine you can use a rolling pin or wine bottle. If you flour it well, you can roll it up like a swiss roll and slice it into thick or thin noodles, or leave in sheets for a lasagne.
Boil in salted water till al dente. You will never want to eat packaged pasta again.
